I thought it would be fun to experiment a little, adding spinach, ground flax seed and some almond flour. I was pleasantly surprised at how good they turned out! My son, Keenan, requested pancakes yesterday morning, so I thought it would be fun to experiment a little, adding spinach, ground flax seed and some almond flour. I was pleasantly surprised at how good they turned out! They were a big hit with Keenan because as we were eating breakfast he said, “Mommy, these are my favorite!” I hope you enjoy them as much as we do!  READ MORE

pasta and lamb My husband Steve and I are in the middle of renovating our house. What a blast! Steve and I are so grateful to them for taking us in. One of the ways I’m able to thank them and show them how appreciative we are, is to cook. READ MORE

Cinnamon baked apples - easy to make and delicious! These are such a treat, especially for those of you trying to cut out that sweet toxic sugar from your life or battling a mean case of Candida.

Apples are full of phytonutrients and fibre both of which can help you balance your blood sugar, preventing those raging episodes of the hangry (hungry and angry at the same time!). Though they’re not crazy high in vitamin C (it varies depending on the kind), apples do pack about 8 mg per apple, an important vitamin since it’s water soluble and consistently needs replacing in the body.  READ MORE

Paleo nutty banana bread by Melissa at FitnWellMommy.com Since I had some overly ripe bananas sitting around, as well as walnuts from my family’s farm, making banana nut bread seemed like the perfect thing to do this morning with the help of my little “baking assistant!” – my son, Keenan. Lately, Keenan has been getting better and better with mixing, whisking and adding spices. For a while there, everything in the bowl would fly out onto the counter and floor when he would mix, but now, he can do it while keeping all of the ingredients inside! His favorite thing is smelling the spices first and then gently tapping the container to add them to whatever we are making.  READ MORE

Roasted Butternut Squash Almond Flour Pizza Crust

Roasted Butternut Squash Almond Flour Pizza Crust

Butternut squash pizza crust. I must warn you, the crust is not like a traditional pizza. It was soft with crispy edges (and a tad crumbly), but it definitely tasted good! We will certainly be making this again! Since my husband and I were both craving pizza (but we didn’t want to order in or make a traditional pizza), we decided to try something new using the ingredients we had on hand. I found a recipe from Tina at Carrots ‘n’ Cake that called for sweet potatoes and since we didn’t have any, I used roasted butternut squash instead, and it came out great! We topped our pizza with olive oil, baby spinach, prosciutto and feta cheese. Though, I must warn you, the crust is not like a traditional pizza. It was soft with crispy edges (and a tad crumbly), but it definitely tasted good! We will certainly be making this again!  READ MORE

Moroccan Kale Salad - "It will definitely become one of our “regulars!” " Ever since I made Massaged Kale Greek Salad, I just can’t go back to cooking kale. Eating it fresh in a salad is the best way to go in my opinion! Instead of making my typical Greek salad, I was craving something different, so I used the same spices and ingredients in my Moroccan Cauliflower Rice to make this recipe. It was SO good, that I almost liked it better this way. It will definitely become one of our “regulars!”  READ MORE
