Gingerly Love: Ginger ’s Health Benefits

Gingerly Love: Ginger ’s Health Benefits

Ginger rootGinger is one of my new favourite ingredients to cook with. My love affair with ginger wasn’t always bliss, I actually never liked ginger until just a few months ago and now I just can’t get enough. I never liked the “clean” taste, but now I find it “oh so refreshing”. It is a great pick me up and adds some intense flavour to my morning smoothies. It also adds a little pow of flavour to pretty much any dish I make, especially salad dressings. Ginger is more than just a tasty root, it is a superfood. It has many amazing health benefits, which is just one more reason I love it.

Bee's pollinate and help plants grow. Photo by Giuseppe SavoMost people probably think of honey and beeswax when they think of bees. Personally, I always think about summer, pears and bee stings. When I was younger I hated bees because every single summer I was stung by a bee while on my grandparents farm. It always happened while I was picking pears fresh off the tree. My grandma would say: “You’re fine”, pick me up and say, “lets go make you a mud pack”. And just like that she had mixed up some dirt and water and slapped it on the spot where I was stung. Amazingly it worked, it took the sting away almost immediately. I managed to get through every summer with just one or two bee stings.

Tomato Soup with Pumpkin Cheddar Biscuits by Kim!My housemate and I had a little Christmas movie marathon last Christmas, which inspired me to make these delicious recipes – Tomato Soup and Pumpkin cheddar Biscuits!

We watched Elf, The Holiday and Family Stone.

Awesomeness abounds! It was so fun! While we watched, I got my cook on and whipped up some incredible tomato soup! I have never made tomato soup from scratch before. When I was living at home, we always had the Campbell’s canned tomato soup…gross! This tasted just like it, but fresher and more delicious! The cheddar biscuits went along so well that it felt like eating total comfort food!  READ MORE

Clarified Butter - making it at homeSometimes eating dairy leads to headaches, breakouts and gas. Boo on you, dairy.

Instead of using straight unsalted butter, I clarified it to get rid of some of those symptom causing problems. Clarified butter (also known as ghee) is simply butter with the milk proteins, sugars and water removed. It’s perfect for people who want to stay 100% Paleo or who might worry that some constituents like lactose or casein in the butter might cause health problems.  READ MORE

Traditional Irish Soup Gone Paleo by Kim!For St. Patty’s Day I made this traditional Irish carrot soup.

I think sometimes I idealize life as an Irishman/woman. I had very romantic notions about this soup and its ability to transport me to jaw-dropping cliffs and sea swept country sides of rolling green. And while I can tell you from experience that that does not happen, it is still a darn tasty soup, especially suited for this little bit of cold weather we are enduring.  READ MORE
