Paleo and Gluten-Free Tortillas with Coconut Flour My husband was very wary about making these with me, not to mention eating them, but to his surprise, he was really impressed! Don’t get me wrong, they are not your Abuelita’s homemade flour tortillas, but they definitely provide a wonderful alternative for those eating the Paleo way or for those who can’t tolerate gluten. The consistency was more like the Ethiopian bread, Injera, but they held up well to our fajitas and did not crumble. Having experimented with coconut flour pancakes and not liking the (crumbly) result, my husband actually wants to make these again, and that’s coming from the Taco Truck king, himself. Cilantro Lime Spaghetti Squash with Chicken I’ve only ever cooked spaghetti squash, scooped out the flesh, and used it for my Spaghetti Squash Tomato Bake, or topped it with pasta sauce. Roasting and tossing it with a sauce (especially a tart and tangy one) was AMAZING! Thanks to the lovely Sarah at A Gutsy Girl, my world has been rocked. This is now one of my favorite ways to eat spaghetti squash! I tweaked things for a different flavor and added chicken. I can’t wait to use the same method of cooking spaghetti squash from now on. Spicy Asian Cabbage Rolls This was actually my first time making or eating cabbage rolls. I was inspired by a friend who made some a few weeks ago, so I thought I would give them a try. We made them with shrimp, but you could make them with ground turkey, pork or beef.

Assembling the cabbage rolls was similar to making enchiladas. You just add the filling and roll up the cabbage leaf. Once your rolls are complete, place them in a small casserole dish to bake.  READ MORE
