Paleo Bread I wish I could take credit for this wonderful creation, but it is adapted from Elana’s Pantry, a wonderful resource for those eating Paleo or following a gluten-free lifestyle. The bread turned out great and was perfect for sandwiches, toast, and French toast!

Paleo Bread

Prep Time: 5 minutes
Cook Time: 30 minutes
Total Time: 35 minutes

Ingredients:

1 ½ cups blanched almond flour
2 tbsp coconut flour
¼ cup golden flaxmeal
2 tbsp psyllium husk (ground)
¼ tsp Celtic sea salt
1 ½ tsp baking soda
5 eggs
¼ cup coconut oil
1 tbsp honey
1 tbsp apple cider vinegar

Instructions:

  1. Place almond flour, coconut flour, flax, psyllium husk, salt and baking soda in a food processor.
  2. Pulse ingredients together.
  3. Pulse in eggs, oil, honey and vinegar.
  4. Pour batter into a greased 7.5 x 3.5 magic line loaf pan
  5. Bake at 350°F for 30 minutes. Cool and serve.

Notes: We added psyllium husk to make the bread more ‘glutenous-like’, which it did, but almost too much. The next time we make it, we will add a little less.
