Spaghetti (Squash) and “Meat”balls Here’s a healthy twist on an old classic: Spaghetti (Squash) and “Meat”balls. Today was the first time I made anything like this and it was so good. Plus afterwards I felt full of energy rather than full of pasta.

I found this recipe for the “meat”balls and adapted it from another recipe I came across (Click Here to check out this recipe). Also I should note there are a lot of steps here and the dish requires a bit of multi-tasking. However, if you aren’t up for a big production, buy the marinara sauce at the grocery store and this meal suddenly becomes one of the easiest things ever!  READ MORE

Cuban Tempeh This is a meal my husband and I brought back with us from a small restaurant cafe in western Michigan. It traveled over 3000 miles to find it’s way to our dinner table. After traveling all those miles and over all that time, the dish has inevitably changed, but the inspiration behind it remains and several times a month we sit down to this, enjoying our meal of tempeh and nostalgia.  READ MORE

Zucchini and Summer Squash Hummus

Have you ever had an abundance of zucchini and summer squash? My creative juices started to dry up and I was just about to call it quits with the squash.

Then something great happened. As I was picking up my CSA share this week, our local farmer (a.k.a my mom) told me about squash hummus, an idea from one of her other CSA shareholders. Brilliant!

So today, eager to use up my squash, I made myself this Zucchini and Summer Squash Hummus.  READ MORE
