No Oat Oatmeal Since I eat this almost everyday, I thought it was only fitting to update this recipe. It is by far one of my favorite things to eat for breakfast because it keeps me satisfied for a long time! I just can’t get enough of this stuff, and my son Keenan loves it too!  READ MORE

I thought it would be fun to experiment a little, adding spinach, ground flax seed and some almond flour. I was pleasantly surprised at how good they turned out! Paleo nutty banana bread by Melissa at FitnWellMommy.com Since I had some overly ripe bananas sitting around, as well as walnuts from my family’s farm, making banana nut bread seemed like the perfect thing to do this morning with the help of my little “baking assistant!” – my son, Keenan. Butternut squash pizza crust. I must warn you, the crust is not like a traditional pizza. It was soft with crispy edges (and a tad crumbly), but it definitely tasted good! We will certainly be making this again! Since my husband and I were both craving pizza (but we didn’t want to order in or make a traditional pizza), we decided to try something new using the ingredients we had on hand. I found a recipe from Tina at Carrots ‘n’ Cake that called for sweet potatoes and since we didn’t have any, I used roasted butternut squash instead, and it came out great! We topped our pizza with olive oil, baby spinach, prosciutto and feta cheese. Though, I must warn you, the crust is not like a traditional pizza. It was soft with crispy edges (and a tad crumbly), but it definitely tasted good! We will certainly be making this again!  READ MORE

Moroccan Kale Salad - "It will definitely become one of our “regulars!” " Ever since I made Massaged Kale Greek Salad, I just can’t go back to cooking kale. Eating it fresh in a salad is the best way to go in my opinion! Instead of making my typical Greek salad, I was craving something different, so I used the same spices and ingredients in my Moroccan Cauliflower Rice to make this recipe. It was SO good, that I almost liked it better this way. It will definitely become one of our “regulars!”  READ MORE
