Who doesn’t love pizza? I know I sure do! However, I was getting pretty tired of the standard toppings I usually use: olives, mushrooms, onions and sundried tomatoes. Sure these are great pizza toppings, but I really wanted to shake things up a little.
I was inspired by a Thai Chicken pizza I used to order all the time before I went vegan. It had a creamy peanut sauce with fresh pineapple, carrots, peppers and lots of cheese. Instead of a sugary, oily peanut butter based sauce, I went for a more natural almond butter base and added tons of fresh Thai inspired toppings! I decided to make the crust from spelt, which is digested much easier than typical wheat. This pizza is so flavorful, you surely won’t miss the cheese!
Thai Chickpea Pizza on a Spelt Crust
Spelt Crust
Ingredients:
1 ¼ cup spelt flour
¼ cup ground flaxseeds
½ cup pure water
2 tbsp extra virgin olive oil
1 tsp pure maple syrup
Pinch sea salt
Instructions:
- Preheat oven to 400°F.
- Combine spelt flour, ground flax and sea salt in a large bowl.
- Make a well in the center and add water, olive oil and maple syrup. Mix until well combined.
- Knead dough for 1 minute, then press onto a parchment lined pizza pan. You want the dough to be fairly thin in order to cover the entire pan.
- Pierce with fork and bake 5-7 minutes.
Thai Almond Sauce
Ingredients:
1/3 cup almond butter
2 tbsp tamari
2 tbsp raw apple cider vinegar
2 cloves garlic
1 inch piece ginger, sliced
¼ tsp red chilli flakes
1-2 tsp pure maple syrup
Instructions:
- Blend all ingredients until very smooth.
Pizza Toppings
Ingredients:
1 tbsp coconut oil
½ medium onion, sliced
½ large bell pepper, sliced into strips
2 leaves kale, torn into small pieces
¼ cup pineapple tidbits
1 medium carrot, grated
¼ cup chickpeas
2 tbsp cilantro, minced
Instructions:
- In a frying pan over medium heat, saute onion and bell pepper strips in coconut oil 7-8 minutes until nicely caramelized.
- Spread Thai almond sauce over pizza crust. Top with kale, sautéed onions & bell peppers, chickpeas, pineapple and grated carrot.
- Bake at 400°F for 10 minutes. Garnish pizza with cilantro and slice into 8.
- Use any left-over almond sauce to drizzle over top of pizza.
- Makes one medium pizza perfect for two!
