Carrot Cake Oatmeal This makes a wonderfully hearty, super quick breakfast for one. You can easily double, triple or quadruple the recipe to make breakfast for a crowd! 

The oats, seeds and nuts provide a lasting source of energy to keep you going all morning. Hemp hearts and walnuts are fantastic sources of Omega 3 Fatty Acids. Coconut offers Medium Chain Triglycerides which prevent fat from being stored in the body. And we can’t forget the carrot! One medium carrot will provide 200% of your daily Vitamin A needs. Vitamin A has many functions in the body including antioxidation, eye health, tissue healing & supporting immune function.

Carrot Cake Oatmeal

Ingredients:

½ cup oats of choice (use gluten-free oats to make this gluten-free!)
1 cup pure water
1 medium carrot, grated
2-3 tsp pure maple syrup
½ tsp cinnamon
Pinch nutmeg
2 tbsp shredded unsweetened coconut
2 tbsp chopped walnuts
1 tbsp hemp hearts
2 tbsp raisins

Instructions:

  1. In a small saucepan over medium heat, heat the oats and water.
  2. Once oats have expanded and half the water has been absorbed, add in the grated carrot.
  3. Let cook another 2-3 minutes until the oats are fluffy and all the water has been absorbed.
  4. Stir in pure maple syrup, cinnamon, nutmeg and cook another minute.
  5. Add coconut, walnuts, hemp hearts and raisins just prior to serving.
