Tomato Cucumber Basil Salad Cool off this summer with cucumber salad. This salad can be picked directly from your garden and on your table in minutes. 

Tomato Cucumber and Basil Salad

Ingredients:

2-3 cucumbers, peeled and cubed
2-3 cups of cherry tomatoes, halved
1/2 cup basil, fresh
1/4 cup mint, fresh
1 clove garlic, pressed
2 tbsp olive oil
1 tbsp apple cider vinegar
1 tbsp fresh lemon juice
1/2 tsp sea salt

Instructions: 

  1. Chop cucumber and tomatoes as desired and place in medium bowl.
  2. Roughly chop or tear mint and basil.
  3. Mix olive oil, garlic, apple cider vinegar, lemon juice and sea salt together to form dressing.
  4. Toss all ingredients together and enjoy.

A little goats feta would be a great topper to this salad.
