Cool off this summer with cucumber salad. This salad can be picked directly from your garden and on your table in minutes.
Tomato Cucumber and Basil Salad
Ingredients:
2-3 cucumbers, peeled and cubed
2-3 cups of cherry tomatoes, halved
1/2 cup basil, fresh
1/4 cup mint, fresh
1 clove garlic, pressed
2 tbsp olive oil
1 tbsp apple cider vinegar
1 tbsp fresh lemon juice
1/2 tsp sea salt
Instructions:
- Chop cucumber and tomatoes as desired and place in medium bowl.
- Roughly chop or tear mint and basil.
- Mix olive oil, garlic, apple cider vinegar, lemon juice and sea salt together to form dressing.
- Toss all ingredients together and enjoy.
A little goats feta would be a great topper to this salad.
