Vegan Paleo Zucchini Cilantro Lime Soup - This soup is delicious and nutritious and absolutely tasty! This morning, one of my clients and I went to a nice restaurant called New Seasons after training for brunch! We shared a rotisserie chicken and devoured some amazing soup- Zucchini Cilantro Soup.

It was so amazing that I set out to duplicate the recipe. So, here it is for your enjoyment!



Zucchini Cilantro Lime Soup

Inspired by New Seasons

Makes: about 6 cups

Ingredients:

All the ingredients in a big soup pot! Ready for blending! 2 tbsp extra virgin olive oil
1 large sweet onion
3 small green zucchinis
1 bunch cilantro
24 oz organic vegetable broth
Juice from 1 lime
Sea salt/pepper to taste

Directions:

  1. In large stock pot, add oil and onions. Cook for 7-10 minutes, until onions are slightly brown and caramel-ly (yumm!!!). Add chopped zucchini, cover and cook for 5 minutes.
  2. Stir in cilantro and cook for 5 more minutes. Add in broth and cook for 10 minutes until veggies are tender.
  3. Add in juice of lime, salt and pepper.
  4. Use immersion blender, blender or food processor to blend unto puree.
  5. Use goat cheese to garnish. Serve hot, warm or cold.
