Tomato Soup with Pumpkin Cheddar Biscuits by Kim! My housemate and I had a little Christmas movie marathon last Christmas, which inspired me to make these delicious recipes – Tomato Soup and Pumpkin cheddar Biscuits!

We watched Elf, The Holiday and Family Stone.

Awesomeness abounds! It was so fun! While we watched, I got my cook on and whipped up some incredible tomato soup! I have never made tomato soup from scratch before. When I was living at home, we always had the Campbell’s canned tomato soup…gross! This tasted just like it, but fresher and more delicious! The cheddar biscuits went along so well that it felt like eating total comfort food! 

Let’s start with the biscuits so you can make the soup while they’re baking!

Pumpkin Cheddar Biscuits (Dairy-free)

Ingredients:

1/2 cup coconut flour
3/4 tsp baking soda
A scant less then 1/2 teaspoon sea salt
1/2 cup extra virgin coconut oil
3 large organic eggs, room temp is best
1 Tbsp apple cider vinegar
1/2 cup plus 2 tablespoons roasted or canned pumpkin puree or butternut squash at room temperature so that the oil doesn’t solidify (you can skip the extra 2 Tbsp if your pumpkin is really watery)
1/4 cup chives or green onions, chopped or thinly sliced
1/3 cup nutritional yeast (gives it the cheddar taste)

Instructions:

  1. Preheat oven to 350°F and line cookie sheet with parchment paper.
  2. Mix all ingredients in a large bowl.
  3. Drop biscuits onto baking sheet and bake for 15-18 minutes, until slightly golden. They will feel soft, but will harden once they cool.
  4. While those are baking, you can whip up the soup!

Delicious Tomato Soup

Ingredients:

1 28 oz can Organic dices tomatoes
1/2 cup full fat coconut milk
Sea salt and pepper, to taste

Instructions:

  1. In a blender or food processor, mix all ingredients until smooth.
  2. Pour into a pot and heat on the stove to desired temperature.
  3. Pour into cups or bowls and garnish with fresh basil or goat cheese.
  4. Enjoy with the pumpkin cheddar biscuits!

It’s a ‘souper’ simple supper!
