Clarified Butter - making it at home Sometimes eating dairy leads to headaches, breakouts and gas. Boo on you, dairy.

Instead of using straight unsalted butter, I clarified it to get rid of some of those symptom causing problems. Clarified butter (also known as ghee) is simply butter with the milk proteins, sugars and water removed. It’s perfect for people who want to stay 100% Paleo or who might worry that some constituents like lactose or casein in the butter might cause health problems. 

Clarified Butter Recipe

Ingredients:

Grass fed unsalted butter (be sure to really read the label!)
1 Thick pot

Instructions:

  1. Put your sticks of golden deliciousness in the pot and set on low.
  2. Do something else while the butter melts down.
  3. You will start to see some of the lactose solids form and slowly come to the surface.
  4. Once most of the white ‘chunkies’ are on the surface, use a cheese cloth (I use a wet paper towel) to strain it into a large pouring glass container (I use my four cup measuring cup).
  5. Pour into glass containers, seal them up with an airtight lid and store in the fridge away from aromatic foods (the butter is sensitive to odors and can absorb some them).
