Banana Oatmeal Muffins
Ingredients:
3 cups old-fashion oats
1/3 cup unrefined liquid sweetener (honey, agave nectar, maple syrup)
2 eggs
2 very ripe bananas, mashed
1 cup almond milk (or other milk), unsweetened
2 tsp baking soda or baking powder
1/4 tsp sea salt
Dash of cinnamon
Optional – 1/2 cup dark chocolate chips, dried cranberries, dried cherries or chopped walnuts or pecans
Instructions:
- Preheat the oven at 350°F.
- Beat the eggs and combine with the mashed bananas, almond milk and desired sweetener.
- Add in all the other ingredients and mix by hand until well incorporated.
- Spoon the batter evenly into 12 parchment-lined (or greased) muffin tins (or 24 mini-muffin tins) and bake for 18-20min until the tops begin to golden.
- Let them cool for 10minutes and enjoy!
