Paleo Good Morning Muffins

Prep Time: 15 minutes
Cook Time: 30 minutes
Total Time: 45 minutes
Yield: 9-12

Ingredients:

1/2 cup coconut flour
1/2 tsp salt
1/2 tsp baking soda
2 tbsp (heaping) 100% pure egg protein powder (or protein powder of choice)
2 tbsp flaxseed
1 tbsp chia seeds
1/2 tsp cinnamon
6 eggs
2 tbsp raw honey
1/3 cup Xylitol
1/3 cup melted coconut oil
1/2 cup vanilla almond milk
1 tbsp pure vanilla extract
1 mashed banana
1/4 cup sliced almonds or chopped walnuts
1/4 cup dried blueberries

Instructions:

  1. Preheat oven to 350 °F and grease your muffin tins.
  2. In a small bowl, mix dry ingredients together, except for almonds and blueberries.
  3. In a large bowl, mix wet ingredients (including banana), except for almond milk.
  4. Add the dry ingredients into the went ones, and slowly add in almond milk, mixing well. You might need a little less or little more milk, depending on the thickness of your batter. You want the batter to be moist, but not too wet or too dry.
  5. Fold in almonds and blueberries and mix well.
  6. Scoop batter into muffin tins and bake for 20-30 minutes. Let cool and enjoy!

Notes: You can add any nuts and dried fruit to your muffins. I just felt like almonds and we had dried blueberries on hand.
