Israeli Chopped Salad

Ingredients:

1 English cucumber – diced
3 kumato or vine ripened tomatoes – diced
1/2 vidalia onion – diced
Handful flat leaf parsley – chopped
1 garlic clove – minced
3 tablespoons red wine vinegar
1/2 teaspoon olive oil
1/2 teaspoon dried oregano
Pinch of Himalayan salt
Cracked black pepper

Instructions:

  1. Toss all ingredients together in a large bowl.
  2. Refrigerate for an hour before serving so vegetables can marinate.
