Winter Fruit Salad With Lemon Poppyseed Dressing I have a new obsession with winter fruits! I usually wait until summer fruits are in season, but this year I decided to embrace winter fruits. Oh my goodness, what have I been missing out on? These winter fruits are sweet and amazing! 

The other day I was doing a photography post on How To Apply The Rule of Thirds To Your Photography, and I needed a good example for this post. So I pulled out my fruit and whipped up a quick fruit salad.

I have to admit, I kind of stumbled upon this recipe by accident (those are the best recipes usually). When I was shooting this salad for my photo shoot, there was something missing in the picture. It just didn’t look appetizing enough!

So I decided to whip up a quick dressing to give the photo the wow factor! Now I was expecting the wow factor with the photo, but was super surprised when I got the wow factor with this delicious salad dressing! When I tasted this fruit salad with the amazing lemon poppyseed dressing, I knew I had hit a home run and knew I just had to share this delicious recipe with you all.

In this recipe I have added bananas, pomegranate and clementines but please feel free to add just about any winter fruit you would like. The recipe for the lemon poppy seed dressing makes a little over 1/3 cup. If you are making a large fruit salad, you might want to double this batch of dressing.

Winter Fruit Salad With Lemon Poppyseed Dressing

Ingredients

  • 2-4 bananas, sliced
  • 1 pomegranate, seeds removed (see video)
  • 4 clementines, peeled and in segments
  • 2 1/2 tbsp olive oil
  • 2 tbsp raw honey
  • 1 tbsp red wine vinegar
  • 1 tsp poppy seeds
  • 1/4 tsp unrefined sea salt
  • 1/2 tsp lemon juice

Instructions

  1. In a bowl combine the bananas, pomegranate and clementines. Set aside.
  2. In a small bowl combine the olive oil, raw honey, vinegar, poppy seeds, sea salt and lemon juice and whisk together until well combined.
  3. Pour dressing over the fresh fruit and toss.
  4. Serve and enjoy.
