So delicious, you just might want to make a double batch. This is an absolute treat and makes for a great healthy dessert! By infusing coconut milk, this recipe is deliciously dairy-free!
Creamy Coconut Rice Pudding
Ingredients:
1 tablespoon coconut oil
1/2 cup arborio rice
2 3/4 cups coconut milk
1 teaspoon ground cinnamon
Stevia or honey to sweeten
Instructions:
- Heat coconut oil in a medium sized pot.
- Stir in the arborio rice on medium/low heat.
- Once the rice becomes slightly translucent (after 30 seconds to a minute), add the coconut milk 1/2 cup at a time. Be sure to stir often so the rice doesn’t stick to the bottom of the pot. Once the rice soaks up coconut milk, add the next 1/2 cup and so on, until you only have 3/4 of a cup of coconut milk left.
- At this point, the rice should look nice and creamy. Add in the 3/4 cup of coconut milk that’s left.
- Stir rapidly to let some air into the rice pudding.
- When most of the coconut milk is soaked up by the rice, remove the pot from the heat.
- Add in honey or stevia to sweeten (optional).
- Let the rice pudding sit for a few minutes before serving.
- Top with cinnamon.
- Enjoy!
