Fresh Organic Salsa Recipe

Ingredients:
2 tbsp organic olive oil
1 tbsp fresh organic lime juice
1/4 cup chopped organic cilantro
1/4 tsp unrefined sea salt
1/4 tsp freshly ground pepper
2 cups fresh non gmo corn, cut off the cob (about 4 ears)
2 organic avocados diced into 1/2″ pieces
2 cups organic cherry tomatoes, quartered
1/4-1/2 cup finely diced organic red onion
Directions:
- In a large bowl, whisk together the olive oil, lime juice, cilantro, salt and pepper.
- Add to it the corn, avocado, cherry tomatoes and red onion.
- Stir gently and serve at room temperature.
