Gingered Rapini & tofu Rapini is a good source of pantothenic acid, and a very good source of dietary fiber, protein, vitamin A, vitamin C, vitamin E (alpha tocopherol), vitamin K, thiamin, riboflavin, niacin, vitamin B6, folate, calcium, iron, magnesium, phosphorus, potassium, zinc and manganese.

Gingered Rapini and Tofu

Ingredients:

1 block of plain organic Tofu
2″ ginger root
1 green onion, sliced into thin rings
2 garlic cloves
2 tsp tamari
1 bunch rapini
1 tbsp olive oil

Instructions:

  1. Heat olive oil lightly, then add grated ginger, tamari, green onion and garlic.
  2. Saute for a couple minutes then add tofu and allow to brown for a couple minutes.
  3. Wash and chop rapini.
  4. Add to pan with sautéed green onion and garlic.
  5. Cover lid and allow to steam till stalks are soft.
