Carrot Lentil Ginger Soup

Ingredients:

4-5 cups organic carrots, chopped
1 1/2 cups red lentils
10 cups water, stock or organic vegetable broth
1 1/2 cups red lentils
1 large onion, chopped
5-6 garlic, minced
2 tbsp organic coconut oil
1/2 cup parsley, chopped
2-3 tbsp fresh ginger, chopped
2 tsp curry, ground
1 tsp cumin, ground
1-2 tsp Celtic sea salt

Instructions:

  1. Bring water to a boil and add lentils, cooking on low for 10-15 minutes.
  2. In a big pot sautee the onions, garlic and ginger in coconut oil on low for 5 minutes or until light to medium brown.
  3. Once lentils are done rinse off thoroughly using a strainer and add to the pot.
  4. Also add to the pot your water or vegetable stock and carrots.
  5. Place on high until boiling occurs, add spices and parsley and then bring to a simmer for 20-25 minutes or until soft tenderness of carrots is achieved.
  6. Remove from heat and let cool and serve OR let cool and add entire pot to a blender or food processer and puree.
  7. Add parsley for garnish and extra flavor.
  8. Serves approximately 6-8 people. Can be frozen for future meal planning.
