Rosemary Roasted Carrots - the perfect side-dish for just about anything! Roasted carrots are super easy to make and taste so delicious. This recipe makes a great side-dish to just about anything. Carrots are loaded with beta-carotene, which is great for our eyes. Rosemary is a herb that has a wonderful scent. Be sure to take a nice big smell of the rosemary fragrance in this recipe. 

Rosemary Roasted Carrots

Ingredients:

2 pounds organic carrots (whole or baby)
1-2 tbsp extra-virgin coconut oil
1 tsp ground rosemary
3/4 tsp white pepper
1 tsp sea salt

Instructions:

  1. Preheat oven to 400°F.
  2. Wash, peel and rinse carrots and cut into whatever shape you’d like (I did coins). You can do little hearts too!
  3. Put into large bowl with all other ingredients and mix well.
  4. Pour carrots onto large baking sheet or pan and bake for 25-30 minutes or until carrots are tender.
