Carrot Lentil Ginger Soup
Ingredients:
4-5 cups organic carrots, chopped
1 1/2 cups red lentils
10 cups water, stock or organic vegetable broth
1 1/2 cups red lentils
1 large onion, chopped
5-6 garlic, minced
2 tbsp organic coconut oil
1/2 cup parsley, chopped
2-3 tbsp fresh ginger, chopped
2 tsp curry, ground
1 tsp cumin, ground
1-2 tsp Celtic sea salt
Instructions:
- Bring water to a boil and add lentils, cooking on low for 10-15 minutes.
- In a big pot sautee the onions, garlic and ginger in coconut oil on low for 5 minutes or until light to medium brown.
- Once lentils are done rinse off thoroughly using a strainer and add to the pot.
- Also add to the pot your water or vegetable stock and carrots.
- Place on high until boiling occurs, add spices and parsley and then bring to a simmer for 20-25 minutes or until soft tenderness of carrots is achieved.
- Remove from heat and let cool and serve OR let cool and add entire pot to a blender or food processer and puree.
- Add parsley for garnish and extra flavor.
- Serves approximately 6-8 people. Can be frozen for future meal planning.
