Ginger molasses cookies - for anytime of the year! As I’ve been cruising FB this week, I have seen a lot of people talking about making cookies. One of my friends even posted a pic of her and her daughter making sugar cookies. My mom and I used to make tons of sugar cookies together. I still have the cookie cutters we used. I went looking for her recipe, but stumbled upon this one instead. 

We made this one together all the time too. As you can see, it was barely hanging on, so I framed it (see below). It brings back a lot of good memories for me about cookies and kitchen time with my mom. So, if you’re mom is still alive, give her a big hug and go make some freaking cookies with her. Maybe you could even make these:

Ginger Molasses Cookies

My mom and I made this recipe together all the time. As you can see, it was barely hanging on, so I framed it. Makes: approximately 2 dozen cookies

Ingredients:

3 cups almond flour
1/2 cup molasses
4 packets Truvia/Stevia
3 tbsp coconut oil
1 tbsp coconut milk
1/2 tsp cinnamon
1/2 tsp ground ginger
1/2 tsp ground cloves
1/2 tsp ground nutmeg
1/2 tsp sea salt
1/2 tsp baking soda
gingerbread men/holiday cookie cutters (depending on time of year and season)

Instructions:

  1. Preheat oven to 350°F.
  2. In a sauce pan, heat molasses to a boil.
  3. Add sweetener, coconut oil, and coconut milk to sauce pan.
  4. Stir ingredients until combined, then remove from heat.
  5. In a small bowl, combine all dry ingredients.
  6. Pour dry ingredients into wet, and mix with a wooden spoon until batter is fully blended.
  7. Roll out dough between two sheets of parchment paper, until about 1/4 inch thick. Refrigerate for an hour.
  8. Cut batter with cookie cutters of choice.
  9. Bake for 10-12 minutes on a parchment paper lined cookie sheet.
  10. Let cool, decorate as desired, and enjoy.

I usually just end up rolling them into a little ball, but if you have the patience to use cookie cutters, then you are amazing!
