Roasted carrots are super easy to make and taste so delicious. This recipe makes a great side-dish to just about anything. Carrots are loaded with beta-carotene, which is great for our eyes. Rosemary is a herb that has a wonderful scent. Be sure to take a nice big smell of the rosemary fragrance in this recipe.
Rosemary Roasted Carrots
Ingredients:
2 pounds organic carrots (whole or baby)
1-2 tbsp extra-virgin coconut oil
1 tsp ground rosemary
3/4 tsp white pepper
1 tsp sea salt
Instructions:
- Preheat oven to 400°F.
- Wash, peel and rinse carrots and cut into whatever shape you’d like (I did coins). You can do little hearts too!
- Put into large bowl with all other ingredients and mix well.
- Pour carrots onto large baking sheet or pan and bake for 25-30 minutes or until carrots are tender.
