Greek Salad It’s that time a year when the tomatoes and cucumbers are in abundance! When I’m not fermenting my ripe veggies I love making this traditional Greek salad. It’s so tasty and the juiciness of the tomatoes is absolutely refreshing. There are so many different types of tomatoes and if you are lucky enough to enjoy an heirloom variety please add them to this dish. Tomatoes are a rich source of nutrients, such as lycopene, which promotes antioxidant protection and they’re also a wonderful source of vitamin A and C.

The oregano in the dressing adds depth and a savoury flavour, but goes particularly well with tomatoes. Oregano is used often in Greek cooking and has many natural health benefits including antibacterial and antioxidant properties, as well as being high in iron, manganese, and other important minerals.

The simplicity of this Greek salad recipe makes it so easy to prepare and is a great staple for a quick lunch.

Greek Salad Recipe (Horiatiki Salata)

Ingredients:

Dressing:
1/3 cup of olive oil
1/4 cup of water
Juice from 1 fresh lemon
3 cloves of garlic minced
1 tsp red wine vinegar
1/2 tsp oregano
Salt and freshly ground black pepper

Salad:
3 large tomatoes, quartered
3/4 of a large cucumber, peeled, seeded, cubed
1/2 red onion, peeled, chopped
1/2 cup pitted black olives

Instructions:

  1. Cut the tomatoes into quartered shaped chunks. Slice the cucumber into nice bite sized cubes. Slice the onion into strips.
  2. Combine the tomatoes, cucumbers, onion and olives into a large bowl. Sprinkle with dressing and toss to coat all the vegetables.
