It’s not even June and I have already suffered my first major sunburn of the season! It doesn’t seem to matter how much sunscreen I apply, it’s never enough. Living in Canada means that we have a very short window of time to enjoy the sunshine and I try to take full advantage of this. One of my favourite things about the summer months (other than enjoying a brewsky or two on the patio) is the fresh produce!! Fresh produce, summer and salad go hand in hand. For this post I have provided a recipe for one of my favourite summer salads.
This sexy dish is called Summer Tofu Salad. Below is a ‘how to’ video and a PDF document containing the recipe. I encourage you to download the PDF and start a Naked Label recipe collection of your own! (Note: This document may take a few seconds to load)
Enjoy!

I didn’t have tofu but went with a sexy summer salad sans tofu and added some dried apricots. Delish!

This was my first time trying tofu….EVER! I have to say that it was a good experience, and I really enjoyed the flavours of all the ingredients. I need to know what else I can make with my left over herb tofu. More recipes please!

I have to say that your video was excellent and the info and recipe look great! Tofu is something that I’ve never tried before and never wanted to, but you’ve convinced me to give it a shot!

WOW, that video was awesome! I love the music and the play by play on how to make the salad come to life. When you applied the homemade salad dressing I wanted to climb through my computer screen
