This grain-free Pumpkin Pie Muffin Recipe is bursting with nutrients and health-promoting fats. They are ridiculously moist and sure to satisfy any pumpkin pie craving this time of year, or anytime!
Paleo Pumpkin Pie Muffin Recipe
Ingredients:
2 cups of almond meal (almond flour)
3 eggs
1 cup of unsweetened, pure pumpkin purée
1/2 cup of maple syrup
2 tbsp of cinnamon
¼ – ½ tsp each of nutmeg and allspice
2 tsp of baking powder
1 tbsp of vanilla extract
Some pumpkin seeds for topping, optional
Instructions:
- Preheat oven to 350°F.
- Whisk the eggs in a mixing bowl. Add the pumpkin purée and mix well. Add all the other ingredients until well incorporated.
- Pour the batter evenly into 12 muffin baking cups (or 24 mini muffin cups). Top each one with a small sprinkling of pumpkin seeds (optional).
- Convection bake for 20-25 minutes.
