Chocolate chip cookies These high fibre, grain-free and protein-packed soft-baked Chocolate Chunk Cookies are sure to satisfy your sweet tooth and get your energy levels and endorphins surging (without making you fall off the nutritional wagon!). See our ‘nut-free’ version below for perfect nutrient-dense school snacks! 

Chocolate Chunk Cookies

Ingredients:

2 cups canned chickpeas (rinsed thoroughly)*
1/2 cup nut butter (almond, peanut, cashew, etc, see below for nut-free version)
1/3 cup unrefined liquid sweetener (honey, agave, or maple syrup)
1 egg**
2 tsp vanilla extract
1 tsp baking soda or baking powder
Pinch of salt
3/4 cup coarsely chopped dark chocolate (or dark chocolate chips)
1/3 cup nuts such as pistachios or chopped walnuts (see below for nut-free version, or omit altogether)

*if using dried chickpeas, the boiling process may make them retain more water than if using canned chickpeas, so you’ll need to add some flour to achieve the correct consistency. We recommend up to 1/4 cup of almond flour.
**for a vegan version of the recipe, omit the egg and 1/4 cup of chickpeas

Instructions:

  1. Preheat the oven at 350°F.
  2. Purée all of ingredients except for the chocolate and nuts in a food processor until the mixture resembles smooth cookie batter (about 30-60seconds).
  3. Then by hand, mix in the chocolate and nuts until well incorporated.
  4. Drop the batter by the tablespoon onto a greased (or parchment-lined) baking sheet to make approximately 18 cookies.
  5. Convection bake for 12-15 min (until the tops begin to get golden).
  6. Let them rest for 15minutes to allow them to cool and firm up. They can then be transferred to an airtight glass container for storage, or served and enjoyed!

Swap Out The Nuts For Seeds!

Replace the nut butter with the same amount of sunflower seed butter and instead of nuts, use your favourite unsalted seeds such as pumpkin seeds or sunflower seeds. Not only does swapping out the nuts for seeds make these cookies a welcomed treat for those with nut allergies, but it boosts iron and protein levels making them powerful energy enhancers!
