I had put them in the same category as brussels sprouts and broccoli. Looking back, I feel somewhat guilty for discriminating against these delicious and nutritious vegetables.     It’s not even June and I have already suffered my first major sunburn of the season! It doesn’t seem to matter how much sunscreen I apply, it’s never enough. Living in Canada means that we have a very short window of time to enjoy the sunshine and I try to take full advantage of this. One of my favourite things about the summer months (other than enjoying a brewsky or two on the patio) is the fresh produce!! Fresh produce, summer and salad go hand in hand.
