A few nights ago, I had a couple bunches of kale and I was tired of just doing the “usual” and sauteing it, so I decided to make a salad with it. Since the weather in Sacramento has been sunny and warm all week, it was nice to do a “cold” one-pot meal. It turned out so good and was a big hit with both my husband and son! This was actually my first time making or eating cabbage rolls. I was inspired by a friend who made some a few weeks ago, so I thought I would give them a try. We made them with shrimp, but you could make them with ground turkey, pork or beef.
Assembling the cabbage rolls was similar to making enchiladas. You just add the filling and roll up the cabbage leaf. Once your rolls are complete, place them in a small casserole dish to bake. READ MORE
