It also increases your energy expenditure, helping to promote weight loss. New research is also showing that the fatty acids in coconut oil can boost brain function in Alzheimer’s patients.

The shredded coconut contains all of the benefits of the oil with the benefit of additional vitamins, minerals and fiber supporting the whole body.

Raw honey contains a variety of vitamins, minerals and probiotics keeping our intestinal health strong which in turn keeps our brains healthy and clear. Raw honey breaks down at a slower rate in our body than sugar, supporting blood sugar control, and calming our nerves.

Chocolate Coconut Macaroons Recipe

Makes 10-15 macaroons

Ingredients:

1 cup shredded coconut
1/4 cup coconut oil
5 tbsp raw cacao powder
1/8-1/4 cup raw honey
1/2 tsp vanilla

Instructions:

1. Mix all ingredients in a large mixing bowl. Note: You can blend it altogether in a food processor (this is a great one!), but it’s not necessary to have one, and can be done well by hand.)
2. Roll into small balls and place on a dish or pan covered with parchment paper.
3. Refrigerate immediately, allowing the macaroons to set. Place in container and store in your fridge or freezer.
