avocado salsa recipe This year we had a particularly painful winter in Toronto. It was colder than usual and we had a lot more snow than we usually do. In addition, spring came late! So this weekend when I was up at the cottage and we finally had some beautiful sunny weather I was inspired to make a fresh salsa that the fam could enjoy while sitting down on the dock watching the boats go by. I threw a bunch of ingredients together and the end result was incredible!!! This is a delicious hearty salsa recipe that is great for parties. Everyone loved it! I will definitely be making this salsa recipe over and over again this summer.

Avocado Party Salsa Recipe

Ingredients:

3 avocados, peel removed and cut into chunks
1 can of black beans (I use the brand Eden), rinsed
1 cup of organic cooked corn kernels (you can buy them frozen and then defrost before adding)
2 tomatoes, diced
1/2 a pineapple, peel removed and diced
1 (or 2) green Anaheim chili peppers
1/3 cup chopped red onion
Celtic sea salt and pepper to taste
1/4 tsp of cayenne pepper (optional if you like it spicier)
1 cup goat or sheep feta (for dairy-free leave out the feta)
1/2 cup chopped fresh cilantro (optional)

Instructions:

  • Put all ingredients into a bowl and mix. Put in the fridge and let sit for a few hours before serving. Mix before serving.

Serve with organic blue corn chips, your favorite cracker/toast, etc.
