Taco Meat I love Mexican food! As you may know fish taco’s are one of my favorite foods on the planet! However, I also love meat tacos. In fact, I love meat tacos, burritos, and taco salads. The problem is that I often don’t trust the meat served at burrito shops and the meat that comes on many taco salads is quite scary looking. 

Often times companies/restaurants use cheap ground meats that are made with the scraps left over from the animal after the good cuts have been removed. In addition, if you live in the USA, some of your ground meat might contain what’s referred to as pink slime, which is ground up beef trimmings put through a centrifuge to separate the fat from the lean meat and then exposed to ammonia gas to kill harmful bacteria (this product is banned in Canada, the UK, and the European Union). Even if you live in one of the countries where pink slime is banned, you still want to make sure you do your homework and get a good quality ground meat, the kind made solely from good cuts of meat and from animals who have been raised properly.

I set out to create a taco meat recipe that was easy to make and tasted better than any taco meat mixture I had ever had before. The result was this Crock-pot Taco Meat Recipe. Wowzer, I don’t mean to brag, but this is seriously DELICIOUS!!! My husband has declared burritos with this taco meat recipe his new favourite dinner. I must admit, he’s not very difficult to please, but if you saw him swoon over this meal the way I did, you would be making it for dinner for your fam tonight for sure!

Crock-pot Taco Meat Recipe

Preparation time: 10 minutes
Cooking time: 3 hours

Ingredients:

1.5 lb wild boar (you could use another ground meet if preferred), thawed overnight
1/2 white onion, diced
1 can black eyed peas, rinsed
1/3 cup frozen organic corn
1/4 cup water
1 tbsp cumin
1 tbsp onion powder
1 tbsp garlic powder
Your favorite hot sauce or cayenne to taste
Celtic sea salt and pepper to taste

Instructions:

  1. Put the ground meat in a crock-pot and using a fork break it up.
  2. Add onion, corn, and beans.
  3. In a bowl mix the rest of the ingredients together and pour into the crock-pot.
  4. Mix all the ingredients together and turn crock-pot to high. Cook for 3 hours (mixing it with a fork every hour).

taco meat process Serve with tacos, in a burrito, on a Mexican rice bowl, on a taco salad, etc.

NOTE: When I made the burrito for my husband I used a sprouted tortilla (Ezekiel), avocado, romaine lettuce, goat cheese and goat yogurt (instead of sour cream), hot sauce, and the taco meat recipe.
