I’m a huge fan of coleslaw. However, most coleslaw dressings are made with ingredients that do not look good naked such as sugar, soybean oil, emulsifiers, and added flavour. I prefer to make my own because that way I know what’s going into it. I love this particular coleslaw recipe because it is so colourful! I came up with it while I was at the cottage one weekend staring at a red cabbage and wondering what to do with it. This is what was born! Enjoy!
Red Cabbage Coleslaw Recipe
Salad Ingredients:
1/2 red cabbage, very thinly sliced
1 carrot, grated
2 green onions, finely sliced,
1/2 cup raisins
1/3 cup sunflower seeds
Dressing Ingredients:
3 tbsp extra-virgin olive oil
2 tbsp apple cider vinegar
1/2 tbsp Dijon mustard
1 tbsp honey
1 1/2 tbsp tahini
Celtic sea salt and pepper to taste
Instructions:
- In a frying pan on the stove on medium heat lightly toast the sunflower seeds.
- In a bowl add all the salad ingredients.
- In a jar shake together dressing ingredients to combine. Add dressing to salad and stir.
- I suggest you let it sit for 15 minutes before eating so cabbage starts to take on the flavour of the dressing and soften up a bit.
