This weekend coming up is Thanksgiving and its a LONG WEEKEND!

Fall has arrived in full force and I wanted to give you an awesomely delicious meal that is warm, hearty and still nutritionist approved. Below is a Shepards Pie recipe. Traditional a Shepherds Pie recipe is filled with butter and animals, since I personally don’t eat those, this is a healthy version that you can add to your Meatless Monday recipe repertoire. 

This dish would also make a wonderful Thanksgiving meal.

Shepard Pie

Ingredients:

Mashed Potatoes:
3-4 lbs of red organic potatoes, peel if you prefer and cut into halves
1/3 cup of rice milk (add more until you reach your desired consistency)
2-3 cloves of minced garlic
Dash or two of thyme

Shepherds Pie Recipe Veggie Filling:
2 tbsp coconut oil
1 yellow onion, finely chopped
3 cloves garlic, minced
4 medium carrots, peeled & diced
1 cup of peas
1 cup of organic corn
1 cup of mushrooms
1 cup of lentils – (let them soak in a cup of water while preparing the veggies)
1 cup of organic vegetable broth
1/3 cup of organic red wine (this is optional – add more broth if you opt out)
2 tsps dried thyme
1 tsp of dried basil
1 tsp of dried parsley
1 tsp dried oregano
Sea salt and black pepper to taste
Then add 1 tbsp of spelt flour at a time until the mixture thickens.

Instructions:

  1. Preheat oven to 400°F and lightly oil a large casserole dish with coconut oil
  2. Boil the potatoes and while boiling begin to prepare the veggie filling.
  3. Add coconut oil to the skillet and add then add chopped onion and garlic. Cook on low for 5 minutes.
  4. Add in the chopped carrots, and celery. Cook on medium-low heat for about 6 minutes. Then add the remaining veggies; corn, peas, mushrooms, and lentils.
  5. When the potatoes are done, drain and then add back to the pot to add the rice milk, seasonings and then mash away.
  6. In a bowl, mix together the liquid ingredients and flour. Add this mixture to the veggies in the skillet and whisk. Cook for another 10 minutes approximately or until thickened. Season with salt and pepper.
  7. Add the veggie mixture to the bottom on the casserole dish. Spread the mashed potatoes on top.
  8. Bake at 400°F for approximately 40 minutes, or until beautifully golden.

* Please note: I have been asked often what I think about ‘ground round,’ as many other Veggie Shepherd Pie recipes call for it. Firstly, its a fake soy based ‘meat’ and my advice is to ditch it and stay far, far, far, far, F-A-R, away. I’ve never seen an organic brand and therefore it’s likely that it contains GMO’s. Not to mention they usually contain some other pseudo ingredients that were made in a science lab, i.e. natural flavour and caramel color. Add mushrooms or lentils to achieve the same desired consistency. If you’re going plant-based, there is no need for ‘it’ anyways. Don’t the below pictures look scrumptious without?

Mushroom Gravy was also poured all over top to add an extra richness to the pie.

Shepherds Pie Recipe

Mushroom Gravy

Ingredients:

4 cups veggie broth
1/3 cup of spelt flour to begin with and add more to reach desired thickness
1 yellow onion, diced
2 tbsp of coconut oil
16 oz cremini mushrooms = two packages or mushrooms thinly sliced and chopped
4 cloves garlic, minced
2 tsp of dried thyme
1 tsp of dried sage
1/3 cup of organic white wine or red (optional) or add more broth
3 tbsp of nutritional yeast

Instructions:

  1. Add coconut oil to a pot over medium heat. Saute onion and garlic for approximately 5 minutes, until lightly browned.
  2. Add mushrooms and spices and saute for 5 more minutes.
  3. Add the wine and bring to a boil for 2 minutes. Reduce heat and add broth, nutritional yeast and flour. Whist well until the gravy has thickened.
  4. Simmer for 15 minutes. Stir often and add salt and pepper, as per your taste before serving.
