Spicy Chicken Salad recipe - super easy and nutritious! A great summer salad! Fresh and abundant with kale and greens and complete protein with a hint of dairy-free ‘cheese’. Yummy! The red curry powder adds flavor and spice. This recipe is so easy, I just know that it will be your go-to recipe when in a hurry and in need for a quick lunch or dinner (or snack!). 



Spicy Chicken Salad

Prep Time: 15
Cook Time: 15

Ingredients:

2-3 cups chopped veggies and kale, mixed
1 organic chicken breast (I like to saute mine in 1 inch of water for about 4-5 minutes on each side)
1 heaping tbsp nutritional yeast (or more if you like it cheezy!)
2-3 tsp red curry powder, to taste
1-2 tbsp olive/coconut oil

Instructions:

  1. Cook chicken (bake, saute, grill) and cut into strips.
  2. Add to kale salad.
  3. Add nutritional yeast, red curry powder and oil and mix thoroughly.
  4. Put on your plate and dive in!! (The heat of the chicken helps to soften the kale a bit, which I like).

I added a cooked sweet potato too. They are so easy to make fast!! Wash (I leave the skin on) and poke with a fork a few times. Wrap in parchment paper and bake for 20-30 minutes at 350°F.
