Delicious crunchy breaded Paleo chicken recipe! When following a gluten-free lifestyle, often the first thing to go is anything ‘breaded’. Deprive yourself no longer! This coconut curried chicken tastes even better than your typically breaded food. Surprise your taste-buds and get hooked on this recipe. Your chicken will turn out very moist and flavorful!
Coconut Curried Fried Chicken
Prep Time: 5 min
Cook Time: 10-15 min
Ingredients:
Raw, thawed organic chicken (you can use whatever part, I used breast)
2 tbsp coconut oil
1/2 cup finely shredded unsweetened coconut
1/2 cup almond flour
2-3 tbsp curry powder
1/4 teaspoon sea salt
Instructions:
- In a large skillet, melt your coconut oil.
- While that’s warming up, rinse and pat your chicken dry.
- Combine coconut, almond flour and spices in a wide bowl or on a plate.
- Roll chicken in mixture until evenly coated. Fry in pan about 4-5 minutes, then flip and cook for 3-4 minutes more.
- Let cool slightly and devour!!!
